This Kai Shun Classic Chef’s Knife 20 cm features a stainless damascus steel blade of 20 cm with a hardness of 61-62 HRC. The blade consists of 32 layers of steel making the knife highly resistant to corrosion and ensuring it remains sharp. This also creates the distinctive semi-glossy pattern that gives the knives their beautiful classic Japanese appearance. Use the chef’s knife for cutting meat fish and vegetables. The pakka wood handle completely encloses the blade preventing the handle from coming loose and protecting it from dirt. The knives are manually sharpened before being sold ensuring that each one is razor-sharp.
